As many as five 18-inch by 26-inch baking pans can be loaded onto the Blodgett ZEPH-100-E SGL Zephaire convection oven's five chrome-plated wire racks. These racks can be adjusted in 11 positions, which are spaced 15⁄8 inches apart, to achieve various results. Intended for low-volume applications, this oven roasts, bakes, and rethermalizes foods quickly with its convection heating system. Three tubular heaters generate heat between 200 and 500 degrees Fahrenheit, which operators can adjust with the solid-state thermostat. A two-speed fan motor blows air throughout the cabinet, dispersing heat evenly to eliminate cold spots that could impact food quality. To preserve set temperatures, solid mineral fiber insulation is built into the top, back, sides, and bottom.
Two doors encase the Blodgett ZEPH-100-EGL single-deck convection oven's porcelainized cooking compartment, and they open dependently with the powder-coated handle so operators can load and remove pans in a sideways configuration easily. Glass panels provide a clear view of the oven's interior so users can manage the baking process. This structure is mounted on 25-inch stainless steel legs that level on uneven flooring, reducing the risk of rocking as pans are loaded and removed. To withstand high-volume use in commercial environments, this 381⁄4-inch-wide by 367⁄8-inch-deep by 57-inch-high oven is constructed of lasting, durable stainless steel, and its full angle-iron frame adds structural rigidity.
