To roast, rethermalize, or bake a wide product range, the Blodgett ZEPH-100-G SGL Zephaire convection oven's solid-state infinite controls enable operators to adjust temperatures from 200 to 500 degrees Fahrenheit and modify the fan motor's speed to circulate heat efficiently. A 60-minute timer tracks elapsed time for precise cook timing, reducing the risk of burning or undercooking. Powered by LP gas, this dual-flow gas system uses direct and indirect heat, and its electronic spark-ignition control system simplifies startup. Its dual-tube burners are removable for cleaning and maintenance, and a pressure regulator and manual gas service cut-off valve are built onto the front control area so users can manage incoming gas flow.

As a single-compartment unit, this Blodgett ZEPH-100-G SGL gas convection unit measures 38.25 inches wide by 36.88 inches deep by 63.06 inches high and accommodates five 18-inch by 26-inch baking pans in a left-to-right position on its five chrome-plated racks. The racks can be adjusted in 11 positions, which are spaced 1.63 inches apart, to support various baking methods. Two dependent doors encase the porcelainized cooking compartment, enabling users to open both doors simultaneously with one hand, which can streamline pan loading and insertion. This rust-, corrosion-, and wear-resistant stainless steel unit features a rigid, full angle-iron frame for lasting strength, and solid mineral fiber insulation built into the top, back, sides, and bottom helps preserve programmed temperatures. To prevent wobbling on irregular flooring, this model is furnished with adjustable, 25-inch stainless steel legs.
